Sriracha-Mayo Grilled Cheese

So, as some of you may know. I spend about 8 months out of the year in Buffalo. I go to school out here. We have this wonderful coffee chain called Spot Coffee, and their grilled cheese sandwiches are off the hook. Their coffee is wonderful as well, but that’s a whole other blog post.

I decided to replicate their grilled cheese sandwich today, only to find that my fridge has no tomatoes, no American cheese, or focaccia bread. Problem? Not really. It helps that I have been on a huge Sriracha kick lately, because the spicy mayo used on Spot’s sandwiches is killer. Being in college means you learn to become a master improviser.

What you need:

Two slices of bread, whole wheat preferred
Four slices of cheese, American or Mozz
About 2.5 tablespoons of Mayo
2 tablespoons of salsa
Sriracha to taste

How to make it:

Combine mayo and sriracha in a separate bowl. Spread liberally onto both slices of bread. Add cheese and salsa. Heat frying pan to medium-high and coat with butter/PAM. Throw sandwich on the pan with a hamburger press, and let cook on each side for about 4 minutes (I like mine crispy, you can play with the timing). Take off pan, slice in half, and serve with chips.
