Pasta with Lemon and Ricotta

Now, the problem with being the only person in the kitchen, is that your hands are too dirty to take photos during each step. I’m trying to be a little more proactive about the situation, but it’s still pretty annoying to get cheese/raw meat goop/vegetable goop all over your fancy iPhone.


The last time this pasta was made, we set off the smoke detectors in my apartment because someone had forgotten to clean the oven…but everything turned out okay.


What you need:

1 Box o’ Pasta, I like ziti for this one.
2cups of ricotta cheese
Some olive oil, about 3 tablespoons
Juice of 1 1/2 lemons
1/2 cup grated Parmesan cheese
1/2 tsp salt
1/2 tsp pepper
Chopped basil, about 1/2 cup


How to make it:

Fill a pot with water, and set it to boil. When it is boiled, you should put the pasta in. While that’s all happening, you take EVERYTHING ELSE (aside from the basil) , and put it in another pot. Stir it all together,  and put it over low heat while the pasta is cooked (about 10-12 minutes). The ricotta should be very soft by the time the pasta is done. When that’s all done, you pour the pasta and sauce into a bowl, and top with more parmesan cheese and basil.
