So, I absolutely love soup. I used to hate soup as a kid, especially because that’s all that was fed to me in the winter (the joys of being Russian). As I got older, I started liking it more and more, which kicks massive butt, because soup is awesome.
I have a sick obsession with gazpacho as well, so I will show you guys how to make it.
What you need:
1 28oz can crushed tomato
About 3 bell peppers, I prefer a red, green, and orange, dice them
3 cucumbers, diced
1 tomato, diced
3 cloves of garlic
1 onion, diced
1/4c olive oil
Hot sauce (optional!)
You’re going to need a blender for this, as well.
How to make it:
Add about half of the peppers, onion, cucumbers, and tomato into the blender, along with the garlic and olive oil, and set to chop. Once it’s chopped well, add the can of crushed tomato, with juice, and set to puree. Add salt and pepper, and puree for another two minutes. It should be smooth now.
Take the rest of the diced vegetables, and arrange nicely on a plate. You can toast some bread in the oven to make croutons as well.
